Indian chef Sarfaraz Ahmed introduces Indian flavors at a short-term restaurant venture in Kolkata
The Westin Kolkata's Ruh-B-Ruh is hosting a unique culinary event, a 10-course degustation experience curated by Michelin Star awarded Chef Sarfaraz Ahmed. Running from August 1st to 3rd, 2025, this pop-up offers a contemporary take on traditional Indian cuisine, combining indigenous ingredients with modern techniques.
The event, held on the 31st floor of the hotel, provides a stunning skyscape view as a backdrop to each course, expertly paired with signature cocktails. However, the exact dish names or detailed menu items are not explicitly listed. For a detailed menu, it is recommended to contact the event organizers or check for official announcements.
One of the dishes on the menu is the Duck ghee roast, dal vada waffle, and curry leaf honey. Another innovative offering is a cacao shell filled with lemon aguachile and mint. The Chicken cafreal, ross omlette, and Xacuti curry from Goa is a spicy, mouthwatering dish, while the Ghewar chaat, with avocado kachaloo, strawberries, pomelo, and a crunchy ghewar, offers a refreshing twist.
The Turmeric cocktail, a sweet mango-coconut based tequilla drink, is served to counterbalance the spiciness of the Chicken cafreal. The Cardamom cocktail, with a refreshing base of cucumber and basil, accompanies the spicy Duck ghee roast. A warm, prawn and asparagus salad, served on a bed of aloo zeera espuma, is paired with a hot cup of rasam. The meal ends with a Paan temaki.
The dessert is paired with an in-house coffee liquer, although some may find it a bit too strong. The dessert served at the end of the meal is Caramel milk, roasted barley ice cream, and rose cookie (achappam), garnished with goji berries, served on a bed of soan papdi.
The Khichdi of India, served on a trolley with local ingredients like kasundi from Bengal, saffron from Kashmir, and more, is a comforting, flavorful dish. The kesar, garlic chutney, green apples, and raw papaya salad stands out in the Khichdi of India.
The event is a celebration of the Hilsa season in Kolkata and takes place at The Westin Kolkata, Newtown, Kolkata. The event's timings are 12-3 pm & 7.30-11.30 pm. The price for the set menu for one person is Rs 4499.
